Today I had a long hard day of clinicals and school. I was oh so very hungry when I came home. What can I make quickly? I asked myself, but given the fact that I am still new to this and don't know a WHOLE lot of combinations I get confused and flustered quite easily. I had some tofu left, so I looked at this recipe I saved a long time ago for tofu cacciatore. I kind of followed it, but not fully, because I didn't have some stuff. But thats what it's alllll about I suppose.
I used some tomatoes my dad had jarred with garlic and some other spices and what not. Also some all spice, parsley, rosemary, basil, the extra corn from yesterday, salt, pepper, an onion, garlic, and white wine. The recipe I found called for vegetable broth but I am currently out and also out of enough vegetables to make a broth. So that's alright.
And of course the tofu.
I made a mess chopping those juicy tomatoes though. But soooo good!
Basically I just sautéed the onions and garlic, then added everything else and let it simmer for 20 minutes. (About half a block of tofu, half a cup of the tomatoes, half a yellow onion, tablespoon of garlic, and like... maybe 1/8 of a teaspoon of most of the spices and a bit more of the all spice.)
Don't add the tofu until the very end!!
I'm not sure why... but that's what the recipe I was loosely going off of said to do.. so I didn't question it. I do think, however, that adding it before I let the mixture simmer may have been a good idea to let it soak up all those delicious flavours of the .. stuff.
But don't!
Because a random website I found the recipe off of said not to - this is why I need advice and comments.
One thing: I definitely added too much corn, but it's so effing good it's difficult to believe that that is possible. Still, I take full responsibility for this mistake. It was delicious anyways.
It was good. Quite enjoyable, especially when put on top of the bread... mmm, would have been good with pasta or rice or something as well.
