Chickpea Salaaawwd

Okay!
So, here is a very simple salad I made a red onion dressing for. Tomatoes, chickpeas, cucumber, and romaine lettuce. MMMMMMMMMMMMM

(I would post the recipe for the red onion dressing but I honestly forget how I made it. Throw some Dijon mustard, red onions, apple cider vinegar, salt, pepper, annd.. other stuff I don't remember)




Good lunch. 

Ps. Any vegans or vegetarians looking for extra protein: SWALLOW.

Beany Salad

Yesterday I bought a bunch of canned beans BECAUSE I can't seem to cook them correctly. They're always tough and not good. Except chickpeas, I'm pretty good with those. I'm also finding... that it really IS easier to cook without a recipe, if you know a LITTLE bit about what you're doing. Otherwise things turn out badly, for me anyways.

Beany lovely Vegetable SALAD

  • I carrot grated
  • three radishes 
  • half a red onion
  • about a tbsp of garlic
  • a few green beans chopped 
  • couple stalks of celery chopped
  • can of mixed beans
  • a vinaigrette (I used classic herb)

Canned beans suck but at least aren't like eating... something with shells



I kept adding and adding which is what I do when I have no idea what I'm doing, which is often. Usually it ends badly though, this time it turned out ... well you'll have to wait and see!

And soo! I made this lovely salad. But since I didn't have to time waste sitting and waiting for it to soak and become all yummy, I made a wrap. Spread some hummus on a tortillas and slap it on like you were slappin' the bass man. 





And the answer was that it was delicious. Satisfying, and easy! 
Okay great, another blog of something any vegan already knows how to make!

Tofu Cacciatore!

Today I had a long hard day of clinicals and school. I was oh so very hungry when I came home. What can I make quickly? I asked myself, but given the fact that I am still new to this and don't know a WHOLE lot of combinations I get confused and flustered quite easily. I had some tofu left, so I looked at this recipe I saved a long time ago for tofu cacciatore. I kind of followed it, but not fully, because I didn't have some stuff. But thats what it's alllll about I suppose. 


I used some tomatoes my dad had jarred with garlic and some other spices and what not. Also some all spice, parsley, rosemary, basil, the extra corn from yesterday, salt, pepper, an onion, garlic, and white wine. The recipe I found called for vegetable broth but I am currently out and also out of enough vegetables to make a broth. So that's alright. 


And of course the tofu.


I made a mess chopping those juicy tomatoes though. But soooo good! 


Basically I just sautéed the onions and garlic, then added everything else and let it simmer for 20 minutes. (About half a block of tofu, half a cup of the tomatoes, half a yellow onion, tablespoon of garlic, and like... maybe 1/8 of a teaspoon of most of the spices and a bit more of the all spice.)
Don't add the tofu until the very end!!
I'm not sure why... but that's what the recipe I was loosely going off of said to do.. so I didn't question it. I do think, however, that adding it before I let the mixture simmer may have been a good idea to let it soak up all those delicious flavours of the .. stuff. 
But don't! 
Because a random website I found the recipe off of said not to - this is why I need advice and comments.
One thing: I definitely added too much corn, but it's so effing good it's difficult to believe that that is possible. Still, I take full responsibility for this mistake. It was delicious anyways. 



It was good. Quite enjoyable, especially when put on top of the bread... mmm, would have been good with pasta or rice or something as well. 

English muffin Tofu Scramble Pizza?

To begin, I scrambled up some tofu with onion and garlic, then added some paprika and Italian spices. Added to it some corn that I mashed myself in attempt to make creamed corn... not so successful but still good because corn makes everything good no matter what form it is in. I spread some pizza sauce on my english muffin, topped it off with all the scrambled goodness, and added asparagus that I had previously chopped and boiled. MMMM.
Into the oven at 425 for I have no idea how long I cooked it for!




End result = not horrible. I was I was a master chef though, soon?!

Helllloooo Blogging World!

Well, this feels weird and I don't know quite what I'm doing but I figure it's about time I get some help with this whole veganism thing and share what I do with little knowledge for anybody who's just starting out like meeeee!


**Another note! I just learned in nutrition class today that younger people (I am 21 so this applies) do not absorb Vitamin B12 supplements due to... intrinsic factor and some other things. So, my professor told me to try these tabs that dissolve on your tongue or ... which is the more likely option because it's more efficient, I will have to get shots! Oh no! I wish I had some followers so they could tell me what they thought about this interesting piece of information I've attained....
